Yields 26 Bites
Ingredients
1/2 cup butter, softened
3/4 cup brown sugar, packed
1 tsp vanilla extract
1.5 cups organic coconut flour
1, 14 oz. can of sweetened condensed milk
1/2 cup semi-sweet chocolate chips
1/2 cup walnuts or pecans, chopped
White chocolate chips for drizzling over bits
Easter sprinkles or quins
Directions
In an electric mixer on medium to high speed, combine the softened butter and packed brown sugar.
Add in organic coconut flour, sweetened condensed milk and vanilla extract and beat until combined.
In a mixer, pulse the semi-sweet chocolate chips and chopped pecans or walnuts. Then stir into mixture in step 2.
Cover bowl with plastic wrap and chill in refrigerator for approximately one hour.
Roll dough into 1" balls. If too sticky use a bit of organic coconut flour.
Flatten balls and create egg shape by hand or using a cookie cutter.
Line a cookie sheet with parchment paper. Place egg shaped bites on sheet, loosely covered and refrigerate again for 15-20 minutes.
In a double boiler, melt the white chocolate chips.
Drizzle melted white chocolate chips over the bites and then sprinkle with Easter sprinkles or quins.
Store in refrigerator until ready to serve. Should be served cold.
