Tapioca flour is made from the root of the cassava plant. Once ground it takes the form of a light, soft, fine white flour. This flour adds chewiness to baking and also makes a good thickener. The flavour of tapioca is somewhat neutral, which makes it ideal for thickening both sweet and savoury foods. Tapioca flour is also used for jellies and puddings since it dissolves well in warm water.
Granular preparation of Cassava starch used especially in puddings and as a thickening in liquid food; also a dish (as pudding) containing tapioca. A Cassava plant is also called a tapioca plant. Cassava is grown in tropics for their freshly edible rootstock which yield a nutritious starch.
