    lemon fudge:

    • 2 tablespoons butter
    • 2/3 cup evaporated milk
    • 11/2 cups sugar
    • 1/4 teaspoon salt
    • 2 cups miniature marshmallows
    • 11/2 cups lemon flavoured baking chips

    in a heavy sauce pan, combine the butter, evaporated milk, sugar and salt over medium heat. bring to a full boil, stirring constantly. boil for 4-5 minutes. remove from heat. stir in marshmallows and chips. stir until the chips and marshmallows are melted. spread mixture into a foil-lined buttered 9" square pan. allow to cool. put in the refrigerator to get it to set more quickly. cut into squares.
