salt water taffy is a soft taffy originally produced in the atlantic city, new jersey, area beginning in the late-19th century. despite the name it does not contain saltwater. the origins of the name are unknown; however there are many disputed stories. according to one popular story, a seaside candy store was flooded during a major storm and the resulting saltwater-logged taffy turned out to be delicious, and as a result salt water taffy was born.
an important step in making taffy is the “taffy pull”, which involves stretching the taffy out and folding it in half, repeatedly. this process of pulling taffy aerates it, or incorporates many tiny air bubbles throughout the candy, helping to keep the candy soft and chewy while preventing stickiness.
