Christmas Shortbread Cookie Recipe
Christmas Shortbread Cookies

Yields approximately 24 cookies.


  • 1 cup butter, softened
  • 1/2 cup icing sugar confectionery
  • 1/4 cup cornstarch
  • 1 1/2 cups all-purpose flour
  • 1 tsp. vanilla extract

For Decorating: Melt desired amount of red chocolate flavoured Merckens. Use a spoon to add melted chocolate flavoured Merckens on each cookie and decorate with your favourite Christmas sprinkles.


  1. Preheat the oven to 375°F (190°C).
  2. With an electric mixer, mix butter until fluffy.
  3. Add the vanilla extract, cornstarch, all-purpose flour and icing sugar confectionery. Beat on low for one minute, and then beat on high speed for 3 to 4 minutes.
  4. Scoop a spoon sized amount of cookie dough on an ungreased baking sheet approximately two inches apart.
  5. Bake for 12 to 15 minutes ensuring the edges do not over brown. Cool completely before decorating.
