Festive Fruitcake Recipe
1 1/2 cups golden raisins
2 cups Turkish apricots, roughly chopped
1 1/4 cups white fine sugar
2 1/2 cups water
1 cup salted butter, softened
1/2 cup cream cheese, softened
4 large eggs
1 1/2 tsp vanilla extract
2 1/2 cups Bakers all-purpose flour
1 tsp baking powder
1 cup walnut pieces
2 cups glacé cherries, roughly chopped
1 cup regular fruit mix
Preheat oven to 325°F
Spray two, "4 x 8'' loaf pans with cooking spray and line with parchment paper.
In a sauce pan, over medium heat, combine 1/4 cup white fine sugar, Turkish apricots, golden raisins and water. Simmer for 30 minutes, stirring occasionally. Remove from heat and let cool.
Combine butter, cream cheese, vanilla extract, and remaining white fine sugar.
Add eggs one at a time and combine.
Add cooled Turkish apricots and golden raisins and combine.
Mix in Bakers all-purpose flour and baking powder.
Add regular fruit mix, glacé cherries and walnuts.
Pour mixture into loaf pans and allow to settle.
Bake for 1 hour (bake time may depend on oven-check at 45 minutes).
Remove from oven and allow to cool for 10 minutes. Remove the loaves from pans and allow to cool completely before serving.
