Coco-Berry Energy Balls

  1. Soak the dried cranberries in boiling water for 5-10 minutes;
  2. In a food processor, add the cashews and coconut oil - pulse until the mixture is crumbly;
  3. Add the 1/2 cup shredded coconut, salt, vanilla extract and drained dried cranberries – pulse until everything is combined.
  4. If the mixture seems too wet, add a bit more coconut. If it's too dry, add a bit more cranberries. It should hold together when lightly squeezed;
  5. Roll into balls of desired size and cover in coconut shreds;
  6. Bon appétit!
