Coco-Berry Energy Balls
Ingredients
1 cup raw cashews
1 tbsp coconut oil
1/2 cup shredded coconut + more for coating
1/4 tsp salt
1 tsp vanilla extract
1 cup dried cranberries
Directions
Soak the dried cranberries in boiling water for 5-10 minutes;
In a food processor, add the cashews and coconut oil - pulse until the mixture is crumbly;
Add the 1/2 cup shredded coconut, salt, vanilla extract and drained dried cranberries – pulse until everything is combined.
If the mixture seems too wet, add a bit more coconut. If it's too dry, add a bit more cranberries. It should hold together when lightly squeezed;
Roll into balls of desired size and cover in coconut shreds;
