Vegan Butter Tarts
Ingredients
8 tbsp vegan butter
3/4 cup brown sugar, packed + extra for topping if desired
1/4 cup sultana raisins
1/4 cup chopped pecans or walnuts (+ whole ones for garnish)
5 tbsp arrowroot flour
1 tsp vanilla
Pinch sea salt
3 tbsp plant milk (I used oat)
8 small vegan tart shells
Directions
Preheat oven to 325°F
Cream the vegan butter, brown sugar, arrowroot flour and plant milk together. Add in the vanilla and a pinch of sea salt and mix together fully.
Lay out your tarts on a baking sheet and put a few raisins and crushed pecan (or walnut) bits in the bottom of each tart.
Fill the tarts almost to the top with the butter mixture
Bake for 20-25 minutes or until the crust is golden brown.
