  1. In a bowl mix the dry ingredients.
  2. Add the grated zucchini and green onions.
  3. Mix in the milk progressively until you obtain the right consistency. The batter should be smooth, thick, yet still pourable. You might need to add more or less than 1/2 cup depending on how moist your zucchini is.
  4. Cook in a hot oiled pan for 3 minutes on each side or until golden.
  5. Serve alone or enjoy with a lemon yogurt dressing!

Yield: 8-10 Pancakes
