Vegan No-Bake Power-Up Donuts

  1. Add dates, almond butter, mixed nuts, sea salt to a food processor or blender. Blend until fully combined.
  2. Add maple syrup if using and blend. Mixture should be very soft with no large nut pieces remaining.
  3. Add the puffed quinoa and pulse a few times to incorporate.
  4. Press the mixture into a silicone donut mold. Refrigerate while the toppings are prepped.
  5. Melt the dark chocolate in the microwave in 30 second intervals, stirring in between.
  6. Remove the donuts from the refrigerator. Top each donut with melted chocolate and sprinkle the top with chopped nuts.
  7. Place in the refrigerator for 30 minutes to solidify.

 

Notes: Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 1 month.
