Coconut Graham Cracker Bars
Ingredients
2 cups (240g) graham cracker crumbs
2 cups (160g) unsweetened shredded coconut (optional: reserve some for topping)
1/4 cup (59ml) melted butter
1 can (300ml) sweetened condensed milk
1 tsp (5ml) vanilla extract
3/4 cup (130g) of milk chocolate chips
1/2 cup (60g) of pecan pieces
A pinch of flaky salt for finishing
Directions
Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
In a mixing bowl, combine the sweetened condensed milk, melted butter, and vanilla extract.
In another bowl, mix the shredded coconut and graham cracker crumbs.
Pour the coconut mixture into the bowl with the condensed milk mixture and gently fold until well combined.
Transfer the mixture into the prepared baking pan, using a spatula to press it evenly into the corners and flatten the surface.
Bake in the preheated oven for 20 minutes.
After 20 minutes, remove from the oven and sprinkle the milk chocolate chips on top. Cover with a baking sheet for 5 minutes to allow the chips to soften.
Once softened, use a spatula to spread the melted chocolate across the top of the bars. If you reserved some coconut, sprinkle it on top, along with the pecan pieces and a pinch of flaky salt.
Let the bars cool completely, then cut into squares and enjoy!
