Easy Chocolate Cupcakes
Ingredients
3 3/4 cups + 2 tbsp (750g) Bulk Barn Chocolate Cake & Muffin Mix
4 large eggs
1/2 cup + 2 tbsp (150 mL) vegetable oil
3/4 cup + 1 tbsp (200 mL) water
Directions
Preheat your oven to 350°F (175°C).
Combine all ingredients in a mixing bowl and mix on low speed for 1 minute.
Scrape down the sides of the bowl, then continue mixing on medium speed for 4 minutes, making sure to scrape the sides occasionally.
Line two muffin or cupcake tins with paper liners and fill each cup 2/3 full with batter.
Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Finishing Touches:
Let your cupcakes cool, then get creative! Top with your favourite icing and sprinkle on some decorations for that perfect, sweet touch.
Yields:
Approximately 24 cupcakes or 18 muffins.
