Easy Chocolate Cupcakes

  1. Preheat your oven to 350°F (175°C).
  2. Combine all ingredients in a mixing bowl and mix on low speed for 1 minute.
  3. Scrape down the sides of the bowl, then continue mixing on medium speed for 4 minutes, making sure to scrape the sides occasionally.
  4. Line two muffin or cupcake tins with paper liners and fill each cup 2/3 full with batter.
  5. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
