The Ultimate Pumpkin Spice Baked Oatmeal
Ingredients
2 1/2 cups old-fashioned rolled oats (from Bulk Barn)
1 1/2 cups 2% milk
1 can unseasoned pumpkin puree
2 large eggs
1/4 cup pure maple syrup (from Bulk Barn)
2 tablespoons melted coconut oil
1 teaspoon pumpkin pie spice (from Bulk Barn)
1 teaspoon ground cinnamon (from Bulk Barn)
1 teaspoon baking powder (from Bulk Barn)
1 teaspoon pumpkin spice extract (from Bulk Barn)
1 teaspoon of vanilla extract (from Bulk Barn)
1/4 teaspoon salt
1/2 cup chopped pecans (from Bulk Barn)
Greek yogurt for serving
Pumpkin Spice Honey to drizzle on top (from Bulk Barn)
Directions
Preheat oven to 375°F. Use some butter to grease a 7-by-11-inch baking dish.
Combine oats, milk, pumpkin, eggs, maple syrup, oil, pumpkin pie spice, cinnamon, baking powder, pumpkin spice & vanilla extract and salt in a large bowl! Mix the ingredients until fully combined and then pour the mixture into the prepared baking dish. Sprinkle the top with some of those chopped pecans and voila!
We are ready to bake until golden on top and set which takes approximately 40 minutes. Serve with yogurt and Dutchman's Pumpkin Spice Honey!
