Triple-Ginger Ginger Cookies
Ingredients
3/4 Cup Butter or Butter Alternative
1 Cup packed Brown Sugar or Coconut Sugar
1 Egg
1/4 Cup Molasses
2 Cups Spelt Flour
2 tsp Ground Ginger
2 tsp Baking Soda
1/2 Cup finely chopped or thinly sliced Crystallized Ginger
1 Tablespoon grated fresh, peeled Ginger Root
Pinch of Salt
Directions
Preheat oven to 350°F.
Blend butter, sugar, egg and molasses until smooth. Sift flour, ground ginger and baking soda into butter mixture. Mix together. Fold in chopped or sliced crystallized ginger, fresh grated ginger root and salt.
Roll loonie-sized balls of dough in sugar (try raw sugar for more texture) then flatten with the palm of your hand. Leave LOTS of room on your cookie sheet - these babies like to spread out.
Bake for 8 minutes or until golden brown. :)
Enjoy with a cup of tea and with someone you love. These are cozy and chewy - packed full of good stuff. They will make EVERYONE happy.
