Quinoa Breakfast Bars
Ingredients
1 - Cup Whole Wheat Flour
1 1/2 - Cups Cooked Quinoa
2 - Cups Quick Oats
3/4 - Cup Almonds (Chopped)
2 - Tsp. Cinnamon
3 - Tbsp. Ground Chia Seeds
3 - Tbsp. Ground Flax Seeds
1/2 - Cup Peanut Butter
3/4 - Cup Honey
1 - Whole Banana (Mashed)
Tsp. Vanilla Extract
1/3 - Cup Dried Cranberries
1 - Tsp. Baking Soda
2 - Large Eggs
Directions
Place all ingredients, except whole wheat flour, in a large mixing bowl. Stir together until all ingredients are thoroughly mixed and uniform in texture.
Add in whole wheat flour and mix together just until combined.
Spoon out onto a parchment lined baking sheet (9"/13") and firmly press down to flatten.
Bake at 375 degrees for 15-20 minutes or until golden brown.
Remove from oven and let cool for 20-30 minutes at room temperature.
Once cool, transfer from baking sheet onto a large cutting board. Cut into small bars.
Yield: 15-20 Small Breakfast Bars
