    steamed fonio: 1/3 cup fonio grain, 1 cup vegetable or chicken broth, 1/2 teaspoon salt, or to taste. instructions: heat a medium frying pan over medium-high heat (no oil). add fonio and stir until it begins smoking and just begins to change colour and develop a nutty aroma. add broth slowly and stir into the hot grain (liquid will bubble up and boil). add salt. keep stirring until the water disappears. fonio grain will absorb the broth and begin to fluff up. stir for another 5 minutes. remove from the element/burner and cover with a lid. set aside for 5 mins. remove lid and stir the fonio with a fork. fonio is ready to use in salads or side dishes.

    - 1 1/2 cups of milk, water or milk alternative
    - cinnamon (optional)
    - raisins (optional)
    - brown sugar, maple syrup or other sweetener

    instructions:

    1. pour 1/2 cup of fonio grain into a medium-sized pot. add raisins (optional) and cinnamon (optional)
    2. add 1 1/2 cups of milk, water or milk alternative. bring to a boil.
    3. turn down to medium-low heat and let simmer until liquid is absorbed (about 5 minutes).
    4. add brown sugar, maple syrup or other sweeteners to desired taste.
    5. stir from time to time to prevent the porridge from sticking to the bottom of the pot. leave to stand for 2 minutes before serving.
