    in a bowl, mix together 1 beaten egg and 3/4 cup milk or non-dairy milk. stir in 1 cup of mix until blended. add more milk if needed to adjust batter thickness. pour 1/4 cup batter onto greased preheated griddle (400°f/200°c) and cook until top is bubbly. flip and cook until golden brown.

    yields 6-8 pancakes.

    for waffles, add suggested amount of batter for waffle iron size to preheated and greased iron. cook until golden brown. enjoy!
