    Espresso Brownie Stuffed Cookies


    Ingredients:

    Ingredients for Brownie

    • 1/2 cup butter, melted
    • 1 tbsp oil
    • 1 1/8 cup white sugar
    • 2 eggs, room temperature
    • 2 tsp vanilla extract
    • 1/2 cup all-purpose flour
    • 1/2 cup cocoa powder
    • 2 tsp espresso powder
    • 1/4 tsp salt
    • 1/2 cup dark chocolate callets
    • Optional: 1/4 cup dulce de leche

     

    Ingredients for Cookies

    • 1 cup butter, softened to room temperature
    • 3/4 cup brown sugar
    • 1/4 cup white sugar
    • 2 tsp vanilla extract
    • 2 eggs, room temperature
    • 1 small box instant vanilla pudding mix
    • 1 3/4 cup all-purpose flour
    • 1/2 cup cake & pastry flour
    • 1 tsp baking soda
    • 1/2 cup semi-sweet chocolate chips
    • 1/2 cup milk chocolate chips
    • 1/4 cup white chocolate chips


    Directions:

    Directions for Brownie

    1. In a large bowl, whip the butter, oil, and sugar together using a hand mixer.
    2. Add in the eggs and vanilla extract. Beat for 2 minutes.
    3. Add the flour, cocoa powder, espresso powder, and salt. Once combined, fold in the dark chocolate.
    4. Pour into a greased 8x8 pan. Using a knife, swirl dulce de leche into the batter before baking (optional).
    5. Bake at 350°F for 21-23 minutes. Make sure the brownie is under baked. Set aside.

     

    Directions for Cookies

    1. Cream together butter, brown sugar, and white sugar for 3-5 minutes.
    2. Add vanilla extract, pudding mix, and eggs. Beat together until fully combined.
    3. Add in both flours and baking soda. Stir with a spatula until just combined. Do not over mix.
    4. Fold in chocolate chips.
    5. Use a large cookie scoop to scoop the cookies. Dig a hole into the cookie dough and place a spoonful of the under baked brownie into the center. Cover the filled center with more cookie dough. Place onto a cookie sheet.
    6. Bake at 350350°F for 10-12 minutes.
    7. Let the cookies cool in the pan for 8-10 minutes before transferring to a cooling rack.
