Oatmeal Raisin Cookies
Ingredients:
2 Cups Quick Oats
1 1/4 Cups All Purpose Flour
1/2 Cup Dark Brown Sugar
1 1/2 Tsp Baking Powder
2 Tsp Ground Cinnamon
1/4 Tsp Salt
1/4 Cup Melted Butter
2 Large Eggs
1 Tsp Pure Vanilla Extract
1 Cup Sultana Raisins
Directions:
- In a large mixing bowl, combine the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the melted butter and dark brown sugar until creamy, then add eggs one at a time, then add vanilla extract.
- Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Preheat the oven to 163 °C (325 °F), and line a baking sheet with parchment paper. Form dough into small balls and place 1-2 inches apart. Chill in fridge for 15 minutes.
- Bake at 325 °F for 10-15 minutes, or until toothpick inserted comes out clean. Cool on the pan for 10-15 minutes before placing on a wire rack.
Yield: 12-15 medium sized cookies
