    Oven Baked Funnel Cakes


    Ingredients:

    1 Cup - All Purpose Flour
    1 Cup - Salted Butter
    1 Cup - Water
    2 Tbsp. - Fine White Sugar
    2 Tbsp. - Vanilla Extract
    2 - Large Eggs
    1/2 Cup - Icing Sugar
    1 1/2 Cups - Cherry Pie Filling


    Directions:

    1. Preheat oven to 375 °F.
    2. Place water, butter, vanilla, and sugar into a medium sized pot over high heat. Bring to a boil, then place all of the flour directly into the pot and using a wooden spoon, quickly stir in and mix to produce a sticky dough. Turn heat down to medium and continue to stir and mix for an additional 2 minutes. Let cool for about 10 minutes.
    3. Once cool, place dough mixture into a medium sized mixing bowl, and then using a whisk, add in one egg at a time and whisk until smooth to create the funnel cake batter. (Be careful not to over mix, as the dough will become very stiff!)
    4. Place a piece of parchment paper onto a large cookie sheet and set aside. Using a rubber spatula, transfer batter into a disposable piping bag and cut a small 1/3 inch hole at the tip. Pipe 4 inch circles onto cookie sheet, leaving about 1 inch in between, then pipe swirl shapes into the center of each circle to form a "funnel cake" shape. Place into oven for approximately 20 minutes, or until golden brown. Dust with icing sugar and top with cherry pie filling. Serve warm.
    5. Yield: 8-10 Funnel Cakes
