    Pot of Gold Cupcakes


    Ingredients:

    • 3 3/4 Cups Vanilla Cake & Muffin Mix
    • 2/3 Cup Vegetable Oil
    • 4 Large Eggs
    • 3/4 cup+1 tbsp Water
    • Paper Baking Cups

     

    • 32 oz White Buttercreme Icing
    • Green Food Colouring
    • 1 Disposable Icing Bag

     

    • 3-4 Sour Belts
    • One package Mini Marshmallows
    • 12 Mini Rolo
    • 1/4 cup Yellow Coloured Sugar

     


    Directions:

    • Place vanilla muffin mix, oil, water, and eggs into a bowl. Use an electric mixer on a low-speed mix for 60 seconds. Scrape down the bowl. Mix 4 minutes on medium speed, scraping bowl occasionally.
    • Line 1 muffin tin with paper cups and fill with batter. Bake at 365°F for 23-25 minutes, or until a toothpick inserted in the middle comes out dry.
    • Mix the green colour with the buttercreme icing. Transfer the green icing to a piping bag.

     

    Assembly:

    • Pipe icing onto each cooled cupcake.
    • Cut sour ribbons into 4-inch strips and stick each end into the frosting to form a rainbow.
    • Stick two mini marshmallows into the frosting at each end of the rainbow.
    • To make a pot of gold, dip the bottom side of the Mini Rolo first into the icing and then into the yellow coloured sugar. Stick on the cupcake by one end of the rainbow.
