Canada Day Cupcakes
Ingredients:
3 Cups Deluxe White Cake Mix
1 1/4 Cups Water
3 Eggs
1/3 Cup Vegetable Oil
1/2 Tsp Red Food Colour Paste
1 Jar Wilton White Icing
1/2 Cup Canada Day Quins
Directions:
- Preheat oven to 375 °F
- To make batter, place cake mix, eggs, oil and water in a large mixing bowl and mix on low speed for 30-60 seconds. Scrape down bowl then mix on medium speed for 3 minutes, scraping down bowl occasionally.
- Place paper cups into cupcake pan and fill 3/4 of the way up with batter. Place into oven set at 375 ° for 10-15 minutes, or until toothpick inserted comes out clean.
- While cupcakes are baking, mix red food colouring with 2/3 of the white icing and mix until uniform in colour. Place remaining white icing and red icing in separate piping bags and pipe onto each cupcake. Decorate with Canada Day quins.
Yield: About 24 Cupcakes
