    Ciao Bella Rainbow Pasta Salad


    Ingredients:

    Pasta Ingredients:

    • 500g Ciao Bella Rainbow Pasta from Bulk Barn Foods
    • 4-6 quarts water
    • 1 diced bell pepper
    • 1 thinly sliced and diced zucchini
    • 1 cup halved cherry tomatoes
    • 1/4 cup diced red onion
    • 1/4 cup sliced sun dried tomatoes
    • 1/2 cup diced olives
    • 1 cup feta
    • 1 cup fresh mini mozzarella balls
    • 2 tbsp dried parsley
    • 2 tbsp dried basil


    Dressing:

    • 1/3 cup red wine vinegar
    • 1/2 cup extra virgin olive oil
    • 1/2 tbsp dried oregano
    • 1 tsp sea salt
    • 1 tsp black pepper


    Directions:

    1. Bring the water and pasta to a boil. Simmer for 10-12 minutes until pasta is cooked al dente. Rinse the pasta under cool water.
    2. Prepare the dressing by whisking all of the ingredients together. Add the cooked pasta to a large bowl. Pour the dressing over the pasta, and toss until fully coated.
    3. Chop all of the ingredients for the pasta salad (pepper, zucchini, cherry tomatoes, red onion, sun dried tomatoes, olives, feta, mozzarella, and seasoning), and mix them into the pasta.
    4. Toss the pasta well. Let it sit for at least 30 minutes before serving. It tastes even better the next day after sitting in the fridge overnight (covered). Consume within 5 days.
