    Banana Protein Muffin


    Ingredients:

    • 1 cup mashed ripe bananas (about 2 medium bananas)
    • 2 eggs
    • 1/4 cup honey (60 ml)
    • 1 teaspoon vanilla extract
    • 1 cup blanched almond flour (120 g)
    • 1/2 cup vanilla protein powder (60 g)
    • 2 teaspoons baking powder
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 1/2 cup chocolate chips or chopped walnuts (optional, 80 g)


    Directions:

    1. Set the oven to 350°F (175°C).
    2. Line a muffin tin with 10 liners and spray them lightly with oil. This helps prevent sticking due to the protein powder.
    3. In a large mixing bowl, whisk together the mashed bananas, eggs, honey, and vanilla extract until smooth.
    4. Gradually whisk in the almond flour, protein powder, baking powder, cinnamon, and salt until well combined.
    5. Gently fold in chocolate chips or walnuts if using.
    6. Scoop the batter into the prepared muffin liners, filling each about 3/4 of the way full.
    7. Bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    8. Remove the muffins from the oven and allow them to cool completely before serving.
