Vegan Chocolate Peanut Truffles
Ingredients:
- 1/2 cup (125g) Natural Peanut Butter
- 1/8 cup + 1 tbsp (20g) Coconut Flour
- 1/8 cup + 1 tbsp (25g) Maple Syrup
- 1 tsp Vanilla Extract
- Pinch of Salt
- 2 tbsp Cacao Powder
- 1/2 cup (80g) Semi-Sweet Chocolate Chips
- 1 tsp Coconut Oil
- 1/2 cup (62g) Peanuts Chopped, dry roasted
- Flaky Sea Salt
Directions:
- Add the peanut butter, coconut flour, maple syrup, vanilla extract, salt and cacao powder to a bowl.
- Mix until everything is well incorporated.
- Roll into approximately 1-inch balls.
- Melt the chocolate chips with the coconut oil in the microwave in 30 second intervals until smooth, stirring in between.
- Drizzle the melted chocolate mixture on top of the truffles. Add the chopped roasted peanuts and a pinch of flaky sea salt on top.
- Refrigerate until the chocolate is set (approximately 30 minutes) and enjoy!
NOTE: Store in an airtight container in the refrigerator for up to 1 week.
