Mint Chocolate Cookies
Ingredients:
- 2 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter (room temperature)
- 1 cup coconut sugar
- 1/2 cup cane sugar
- 1 egg
- 1 tsp mint extract
- 15-20 drops of green food colouring
- 60-80g of mint dark chocolate
Directions:
- Sift the flour, baking soda, baking powder and salt into a large bowl.
- In another large bowl, cream the butter and sugar until smooth. Beat in the egg and meat extract. Gradually mix in the dry ingredients. Add green food colouring and mix until evenly coloured. Add in a splash of milk if the mixture is dry.
- Chop the mint dark chocolate into chunks and fold them into the batter.
- Preheat oven to 375°F. Line two baking sheets with parchment paper. Using a cookie scoop or tablespoon, scoop out 10 batches on each baking sheet (20 cookies total).
- Bake for 12 minutes. Let cool for 20 minutes before eating. Enjoy!
