Vegan No-Bake Power-Up Donuts
Ingredients:
- 12 (285g) Medjool Dates, pitted
- 1/4 cup (60g) Almond Butter
- 1 1/2 cups (185g) Deluxe Mixed Nuts, Salted
- Pinch of Sea Salt
- 2/3 cup (45g) Organic Puffed Quinoa Cereal
- Optional: 2 tbsp Maple Syrup
Toppings:
- 1 cup (125g) Belcolade Extra Dark Chocolate Wafers
- 1/2 cup (62g) Deluxe Mixed Nuts, Salted, chopped
Directions:
- Add dates, almond butter, mixed nuts, sea salt to a food processor or blender. Blend until fully combined.
- Add maple syrup if using and blend. Mixture should be very soft with no large nut pieces remaining.
- Add the puffed quinoa and pulse a few times to incorporate.
- Press the mixture into a silicone donut mold. Refrigerate while the toppings are prepped.
- Melt the dark chocolate in the microwave in 30 second intervals, stirring in between.
- Remove the donuts from the refrigerator. Top each donut with melted chocolate and sprinkle the top with chopped nuts.
- Place in the refrigerator for 30 minutes to solidify.
Notes: Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 1 month.
