Vegan Pouding Chômeur
Ingredients:
- 1/3 cup (66g) Coconut Oil, melted
- 1/3 cup (72g) White Fine Sugar
- 1 tsp Vanilla Extract
- 1 Flax Egg (1 tbsp ground flax seed + 3 tbsp water)
- 1/2 cup (130ml) Plant Milk, room temperature
- 1 1/2 cup (157g) All-Purpose Flour, sifted
- 1 tsp Baking Powder
Sauce:
- 1 cup (250ml) Maple Syrup
- 1 cup (250ml) Plant Milk
- 2 tbsp Vegan Butter (plus more for greasing the pan)
Directions:
- Preheat the oven to 350°F.
- In a bowl, whisk together the coconut oil and the sugar.
- Add the vanilla, flax egg and plant milk and whisk together until combined.
- Mix together the flour and baking powder and add to the wet ingredients. Set aside.
- In a small saucepan add in the maple syrup, plant milk and butter. Heat over medium heat until the butter is melted.
- Grease a 9 x 13 baking dish. Pour the mixture and spread evenly into the pan.
- Pour the sauce over top.
- Bake for 35-40 minutes.
