    Cinnamon Sugar Waffles

    Ingredients:

    • 2 cups (250g) All-Purpose Flour
    • 4 tbsp White Fine Sugar
    • 1 tbsp Baking Powder
    • 2 tsp Ground Cinnamon
    • 1/2 tsp Salt
    • 2 Large Eggs, room temperature
    • 1 3/4 cups (415ml) Milk, warm
    • 6 tbsp Unsalted Butter, melted
    • 1 1/2 tsp Vanilla Extract

    Topping:

    • 1/4 cup (50g) White Fine Sugar
    • 1 tsp Ground Cinnamon

    Directions:

    1. Preheat waffle iron.
    2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon and salt. Set aside.
    3. In a separate bowl, whisk together eggs, warm milk, melted butter, and vanilla extract until well incorporated.
    4. Slowly pour the milk mixture into the flour mixture whisking together until incorporated (don't overmix).
    5. Let batter rest for 5 minutes.
    6. Meanwhile, make your topping. In a small bowl add sugar and cinnamon together, mix together.
    7. Ladle the batter into preheated waffle iron and spread the batter out. Don't overfill the waffle iron (it will create dense waffles).
    8. Sprinkle cinnamon sugar topping lightly onto the batter and using a butter knife slightly smooth the topping into the batter. Avoid adding thick layers of cinnamon sugar.
    9. Close the lid and cook the waffles until golden and crisp. *Note depending on the waffle iron it may get a little messy. If the sugar is sticking to the iron too much add a little batter on top of the cinnamon sugar and spread it out (make sure it's not too thick).
    10. Serve waffles immediately, top with butter and maple syrup (sprinkle a little extra cinnamon sugar on top just before serving).

    NOTES:

Carefully wipe down the waffle iron while it's still warm to remove any leftover cinnamon and sugar. Place leftover waffles in an airtight bag and refrigerate for 3 days or freeze for up to a month. Reheat waffles in the toaster.
