    Fig and Date Bar


    Ingredients:

    • 1/2 cup (118ml) Water
    • 1/2 cup (118ml) Lemon Juice
    • Zest from a Lemon
    • 1/2 cup (118ml) Orange Juice
    • 2 cups (350g) Diced Dates
    • 1 cup (150g) Figs Turkish Natural, diced
    • 1 3/4 cup (140g) Quick Rolled Oats
    • 1 1/2 cups (180g) All-Purpose Flour
    • 1/4 tsp Salt
    • 3/4 tsp Baking Soda
    • 1 cup (200g) Brown Sugar, packed
    • 1 1/4 cup (280g) Unsalted Butter, softened
    • 1 1/4 cup (125g) Unsweetened Coconut, Shredded
    • 1 cup (150g) Walnut or Pecan Pieces


    Directions:

    1. Preheat oven to 350°F. Line a 9-inch square pan with parchment paper and set aside.
    2. Place the water, lemon juice, lemon zest and orange juice into a pot. Add in the dates and figs. Cook over medium heat until the dates and figs are soft and paste-like.
    3. In a large bowl, combine oats, all purpose flour, salt, baking soda, brown sugar, butter, coconut, and nuts. Mix until crumbly. Press half of the mixture into the bottom of the parchment lined pan.
    4. Pour the date mixture and spread evenly over the top of the base.
    5. Add the remaining oat mixture on top.
    6. Bake for 20-25 minutes or until golden.
    7. Allow squares to cool completely before serving.

    NOTE: Store in an airtight container at room temperature for 5-7 days or in the freezer for up to 3 months.
