    Hot Chocolate Cookies


    Ingredients:

    • 1/4 cup + 1 tbsp (80g) Unsalted Butter, room temperature
    • 1/4 cup (50g) White Fine Sugar
    • 1/2 cup (100g) Dark Brown Sugar, packed
    • 1 Large Egg, room temperature
    • 1 tsp Vanilla Extract
    • 1 cup (135g) All-Purpose Flour
    • 1/4 cup (30g) Cocoa Powder
    • 1/2 tsp Baking Soda
    • Pinch of Salt
    • 1/2 cup (85g) Semi-Sweet Chocolate Chips
    • Mini Marshmallows, for topping


    Directions:

    1. Preheat oven to 350°F. Line a cookie sheet with parchment paper and set aside.
    2. In a medium bowl, cream together butter and sugars using a whisk for 3-4 minutes. Add in the egg and the vanilla extract. Mix until fully combined.
    3. In a separate bowl sift together the flour, cocoa powder, baking soda, and salt. Add to the wet ingredients and fold together until just combined.
    4. Add in the chocolate chips. Using a medium sized cookie scoop, make 12 cookies and place them on the prepared cookie sheet.
    5. Chill the cookies in the fridge for half an hour prior to baking.
    6. Bake for 10-12 minutes.
    7. With 2 minutes remaining, remove cookies from the oven. Top each cookie with 3-4 mini marshmallows. Place cookies back into the oven to finish baking.
    8. Remove cookies from oven and allow cookies to cool on the pan for 10 minutes before transferring to a cooling rack to cool completely.

     

    Note: Cookies will keep up to 5 days at room temperature or frozen in an airtight container for up to one month.

    Cook Time: 10 -12 Minutes
    Total Time: 50-60 Minutes
    Yield: 12 Cookies
