    Vegan Chocolate Peanut Truffles


    Ingredients:

    • 1/2 cup (125g) Natural Peanut Butter
    • 1/8 cup + 1 tbsp (20g) Coconut Flour
    • 1/8 cup + 1 tbsp (25g) Maple Syrup
    • 1 tsp Vanilla Extract
    • Pinch of Salt
    • 2 tbsp Cacao Powder
    • 1/2 cup (80g) Semi-Sweet Chocolate Chips
    • 1 tsp Coconut Oil
    • 1/2 cup (62g) Peanuts Chopped, dry roasted
    • Flaky Sea Salt


    Directions:

    1. Add the peanut butter, coconut flour, maple syrup, vanilla extract, salt and cacao powder to a bowl.
    2. Mix until everything is well incorporated.
    3. Roll into approximately 1-inch balls.
    4. Melt the chocolate chips with the coconut oil in the microwave in 30 second intervals until smooth, stirring in between.
    5. Drizzle the melted chocolate mixture on top of the truffles. Add the chopped roasted peanuts and a pinch of flaky sea salt on top.
    6. Refrigerate until the chocolate is set (approximately 30 minutes) and enjoy!

    NOTE: Store in an airtight container in the refrigerator for up to 1 week.

    PREP TIME: 10 Minutes
    CHILL TIME: 30 Minutes
    TOTAL TIME: 40 Minutes
    YIELD: 10 Truffles
