    Coconut Chai Granola


    Ingredients:

    • 4 cups of rolled oats
    • 1.5 cups of walnuts (or nuts of choice)
    • 2/3 cup of dried cranberries (or dried fruit of choice)
    • 1/2 cup melted coconut oil
    • 1/2 cup shredded unsweetened coconut
    • 1/2 cup pure maple syrup
    • 1 heaping tbsp of chai spice*
    • 1 tsp vanilla extract
    • Pinch of sea salt

     

    Chai spice mixture:

    • 1/2 tbsp cardamom
    • 1/2 tbsp allspice
    • 1/2 tbsp nutmeg
    • 1/2 tbsp clove
    • 1 tbsp cinnamon
    • 2 tbsp ginger


    Directions:

    1. Preheat the oven to 350°F.
    2. Prepare the chai spice mix by mixing all of the chai spice ingredients together in a small bowl or sealable jar.
    3. Prepare the dry ingredients for the granola by mixing the oats, nuts, salt, shredded coconut, and 1 heaping tablespoon of the chai spice, together in a large bowl. You have the option of adding in the dried fruit now, or after the granola is finished cooling.
    4. In a separate bowl, mix the wet ingredients: coconut oil, maple syrup, and vanilla extract.
    5. Combine the wet and dry ingredients. Lay onto a baking sheet, and spread out evenly.
    6. Bake the granola for about 20-22 minutes, stirring halfway.
    7. Let the granola cool completely before eating. Enjoy with milk, on top of smoothies, or as a snack.
