    Funfetti Cereal Squares


    Ingredients:

    • 1/2 cup unsalted butter (115 g)
    • 16 oz marshmallows (450 g)
    • 4 1/2 cups Nature's Path Organic Puffed Rice (115 g)
    • 1 tsp vanilla extract (5 mL)
    • 1/3 cup rainbow sprinkles (50 g), plus more for topping
    • 1 cup white chocolate chips (175 g)
    • Pinch of salt
    • 1 cup white buttercream icing – Optional (240 g)


    Directions:

    1. Line a 9×9 inch (23×23 cm) pan with parchment paper and lightly grease with cooking spray. Set aside.
    2. In a small saucepan over medium heat, melt the butter (115 g). Add the marshmallows (450 g) and stir until fully melted. Remove from heat and stir in vanilla extract (5 mL).
    3. Pour the marshmallow mixture into a large mixing bowl. Add the Puffed Rice (115 g) and fold gently with a rubber spatula until evenly coated.
    4. Fold in rainbow sprinkles (50 g) and white chocolate chips (175 g).
    5. Transfer the mixture to the prepared pan and spread into an even layer using a greased spatula.
    6. Allow the cereal bar layer to cool slightly, then spread 1 cup of white buttercream icing (240 g) evenly on top.
    7. If desired, top with extra white chocolate chips and more rainbow sprinkles for a festive finish.
    8. Chill in the fridge to set before cutting into 16 squares. Enjoy!
