Hot Chocolate Cookies
Ingredients:
- 1/4 cup + 1 tbsp (80g) Unsalted Butter, room temperature
- 1/4 cup (50g) White Fine Sugar
- 1/2 cup (100g) Dark Brown Sugar, packed
- 1 Large Egg, room temperature
- 1 tsp Vanilla Extract
- 1 cup (135g) All-Purpose Flour
- 1/4 cup (30g) Cocoa Powder
- 1/2 tsp Baking Soda
- Pinch of Salt
- 1/2 cup (85g) Semi-Sweet Chocolate Chips
- Mini Marshmallows, for topping
Directions:
- Preheat oven to 350°F. Line a cookie sheet with parchment paper and set aside.
- In a medium bowl, cream together butter and sugars using a whisk for 3-4 minutes. Add in the egg and the vanilla extract. Mix until fully combined.
- In a separate bowl sift together the flour, cocoa powder, baking soda, and salt. Add to the wet ingredients and fold together until just combined.
- Add in the chocolate chips. Using a medium sized cookie scoop, make 12 cookies and place them on the prepared cookie sheet.
- Chill the cookies in the fridge for half an hour prior to baking.
- Bake for 10-12 minutes.
- With 2 minutes remaining, remove cookies from the oven. Top each cookie with 3-4 mini marshmallows. Place cookies back into the oven to finish baking.
- Remove cookies from oven and allow cookies to cool on the pan for 10 minutes before transferring to a cooling rack to cool completely.
Note: Cookies will keep up to 5 days at room temperature or frozen in an airtight container for up to one month.

Total Time: 50-60 Minutes
