Mini Bean Brownies
Ingredients:
- 1 1/2 cups (270g) Red Kidney Beans, cooked
- 1/2 cup (125ml) Maple Syrup
- 1/4 cup (70ml) Vegetable Oil
- 2 tsp Vanilla Extract
- 2 tbsp Cocoa Powder
- 1/2 cup (165g) Oat Flour
- 1/4 tsp Salt
- 1/2 tsp Baking Powder
- 1/2 cup (105g) Semi-Sweet Chocolate Chips
Directions:
- Preheat your oven to 350°F. Grease a mini muffin pan with vegetable oil and set aside.
- In a high-speed blender or food processor, blend ingredients together except the chocolate chips. Blend until smooth.
- Fold in the chocolate chips.
- Scoop the mixture into the mini muffin pan.
- Bake for 10 to 12 minutes.
- Allow the mini brownies to cool completely before removing them from the pan.
- Enjoy!
