    Oat Flour Cake Pops


    Ingredients:

    Makes 10 cake pops:

    • 1 cup oat flour (~90 g)
    • 1/8 tsp pink Himalayan salt
    • 1 flax egg (1 Tbsp ground flax ~7 g + 2 Tbsp water ~30 mL, let thicken 5 min)
    • 1/2 tsp almond extract
    • 1 tsp vanilla extract
    • 1/4 cup + 1 Tbsp maple syrup or honey (~80 mL)
    • 1 cup white molding wafers (~160 g)
    • 2–3 tsp coconut oil (~10–15 g)
    • Sprinkles, as desired


    Directions:

    1. Line a tray with parchment paper.
    2. Mix oat flour and salt in a bowl. Add flax egg, almond & vanilla extract, and maple syrup. Mix into dough and rest 5–10 min.
    3. Roll 1 1/2 Tbsp (~20 g) dough into balls and place on tray (makes ~10).
    4. Refrigerate dough for 20 minutes while you melt the wafers.
    5. Melt white wafers with coconut oil (microwave in 20-sec intervals, stirring).
    6. Dip tip of stick in the melted wafers, insert into cake ball, chill 5–10 min.
    7. Coat cake pops with melted chocolate, add sprinkles, let set 5 min & enjoy!
