    Vegan Almond Flour Sugar Cookies


    Ingredients:

    • 3 tbsp Unsalted Vegan Butter
    • 2 tbsp White Fine Sugar
    • 1 tsp Vanilla Extract
    • 1 cup (96g) Ground Almonds
    • Pinch of Salt


    Directions:

    1. Preheat the oven to 350 F. Line a baking sheet with parchment. Set aside.
    2. In a bowl cream the butter, sugar and vanilla using a hand mixer.
    3. Add the almond flour and salt. Mix until crumbly. Use your hands to form a dough. Place the dough in the bowl and cover with a damp cloth. Place in the fridge for 15 minutes.
    4. Remove the dough from the fridge and place between two parchment papers to roll (you can also use plastic wrap). Roll until 1/4-inch-thick. Use a cookie cutter to cut out the cookies.
    5. Place cookies on the prepared baking sheet and bake for 12 minutes.
    6. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
    7. Optional: Decorate cookies or dip in melted dark chocolate!

     

    Tips:

    • If you have a hard time forming your cookies try using a smaller cookie cutter and/or making the cookies thicker and/or placing the dough in the fridge until cool.
    • To flavor the dough you can add spices, orange zest, cacao powder, matcha, etc. at the same time as the almond flour.
