Vegan Double Fudge Brownie Loaf
Ingredients:
- 2 Large Bananas, mashed (sub. 1/2 cup unsweetened applesauce)
- 1/2 cup (118ml) Maple Syrup
- 1/2 cup (125g) Peanut Butter (or nut butter of choice)
- 2/3 cup (63g) Cocoa Powder
- 1 cup (125g) Oat Flour
- 1 tsp Baking Powder
- 1/2 cup (118ml) Oat Milk (or milk of choice)
- Pinch of Salt
- 1/3 cup (50g) Semi-Sweet Chocolate Chips
Directions:
- Preheat the oven to 350°F. Line a baking loaf tin with parchment paper and set aside.
- In a medium-sized bowl, mash the bananas with a fork. Next, stir in maple syrup and peanut butter.
- Whisk in the cocoa, flour, baking powder, milk, and salt until incorporated.
- Lastly, fold in chocolate chips.
- Pour the brownie mixture into the lined loaf tin, and top with a few additional chocolate chips.
- Bake for 30 minutes. Allow loaf to cool for 20 minutes before serving.
NOTE: Store in an airtight container in the fridge for up to 5 days.
