    Banana Bread Overnight Oats


    Ingredients:

    • 1/2 ripe banana, mashed (about 50g)
    • 1/2 cup (50 g) rolled oats
    • 1/2 Tbsp chia seeds
    • 1 Tbsp hemp hearts
    • 1/2 tsp ground cinnamon
    • Pinch salt
    • 1/2 cup (120 ml) unsweetened almond milk (or milk of choice)
    • 1/3 cup (80 g) Greek yogurt (plain or vanilla)
    • 1/2 tsp pure vanilla extract
    • 1/2 Tbsp honey (or sweetener of choice)


    Directions:

    1. Mash the banana in a small bowl.
    2. In a mason jar or container, combine oats, cinnamon, salt, hemp hearts, and chia seeds.
    3. Add mashed banana, vanilla, honey, milk, and yogurt. Stir until well mixed.
    4. Cover and refrigerate overnight (or at least 4 hours) to let the oats soak.
    5. When ready to enjoy, add your favorite toppings - think nuts, seeds, dried fruit, or even a sprinkle of chocolate chips.
    6. Optional: For caramelized banana topping, sauté banana slices in a touch of olive oil with a sprinkle of cinnamon and drizzle of honey until golden.
