    Apple Cinnamon Rolls with Maple Cream Cheese Icing


    Ingredients:

    • 3/4 cup(175ml) Milk, room temperature
    • 1/4 cup (50g) White Fine Sugar
    • 1/4 cup (55g) Unsalted Butter, melted
    • 1 Large Egg, room temperature, whisked
    • 1 teaspoon Vanilla Bean Paste
    • 2 tsp Instant Yeast
    • 3 cups (440g) All-Purpose Flour, sifted
    • 1/2 tsp Salt
    • 1/4 cup (60ml) Whipping Cream, room temperature (optional)
    • 1 tbsp Salted Butter, softened (optional)

     

    Filling Ingredients:

    • 2 Medium Apples, cored and thinly sliced (Granny Smith or Honeycrisp)
    • 1 cup (215g) Dark Brown Sugar, packed
    • 1 tsp Ground Cinnamon
    • 1 tsp Ground Nutmeg
    • 1/4 cup Ghee or Butter, softened

     

    Icing Ingredients:

    • 4.4 oz (125g) Cream Cheese, softened
    • 1/2 tsp Vanilla Bean Paste
    • 1 cup (125g) Icing Sugar
    • 4 tbsp Maple Syrup

     

    Toppings:

    • 1/3 cup Chopped Walnuts (optional)


    Directions:

    1. Grease a 9x13 pan. Set aside.
    2. In a microwave safe bowl add milk, sugar, and butter. Warm in the microwave for 30-60 seconds. Do not boil.
    3. Add egg and vanilla bean paste and mix well.
    4. Place yeast in the kitchen aid mixer or a large bowl. Pour in the mixed wet ingredients and let sit for 3-5 minutes until the yeast has activated.
    5. Mix flour and salt in a separate bowl.
    6. Add in the flour mixture and knead the dough using a stand mixer or by hand. The dough will be sticky and soft to the touch. Do not add more flour as that will dry out the dough.
    7. Place the dough in a covered bowl and let it rise until doubled in size. Let it sit for 1 - 1.5 hrs.
    8. While the dough is rising, wash and cut the apples. Cut them into thin slices. Tip: Let cut up apples sit in salted cold water for 5 minutes. This will prevent the apples from browning.
    9. In a bowl, combine the brown sugar and spices. Add cut up apples and mix well.
    10. When the dough has risen, punch the dough down and roll out onto a lightly floured surface, creating a large rectangle. Spread ghee/butter on the dough evenly. Top with the sugar/apple mixture.
    11. Roll, and cut into even sized pieces and place in the greased baking pan. Tip: use a strong thread or dental floss to neatly cut the rolled dough.
    12. Cover the rolls with a clean dish towel and let rise for 25-30 mins in a warm area or at room temperature.
    13. Optional: Before baking, pour whipping cream all over. This helps create more soft rolls.
    14. Preheat the oven to 350°F. Bake for 25 to 30 minutes, or until the rolls are a light golden brown.
    15. Optional: When the rolls have been removed from the oven, spread a tablespoon of butter on top.
    16. In a bowl, mix together cream cheese, vanilla bean paste, icing sugar, and maple syrup using a hand mixer until smooth. Scrape down the sides of the bowl and mix for an additional 30 seconds.
    17. Spread whipped cream cheese icing on top of the baked rolls.
    18. Optional: garnish with 1/3 cup chopped walnuts! Enjoy!

     

    NOTES: Rolls should be enjoyed within 2 days and stored in the refrigerator. Warm the rolls for 7-10 seconds in the microwave. These can be frozen without baking after they have risen. Cover tightly and freeze for up to 2-3 months. Thaw the rolls overnight at room temperature or in the fridge and bake as directed above. The rolls can be frozen after baking without the icing in an airtight container for up to 2-3 months. When ready to serve, defrost the rolls at room temperature before icing. You can omit the egg if you want to have it egg free. The rolls turn out just as great!
