Sticky Cinnamon Apple Muffins
Ingredients:
Sticky Apple Ingredients:
- 2 apples, diced
- 1 tbsp coconut oil (substitute butter)
- Splash of maple syrup
- Pinch of cinnamon

Dry ingredients:
- 1 cup whole wheat flour (or gluten-free flour)
- 1/2 cup oat flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
Wet Ingredients:
- 1 egg or a flax egg (1 tbsp ground flax seed + 2 tbsp water)
- 1 banana mashed
- 1/2 cup unsweetened apple sauce
- 1/2 cup coconut sugar
- 1 cup milk (or milk alternative)
- 1 tsp vanilla extract
Directions:
- Prepare the sticky apple by sauteing 2 diced apples, coconut oil, maple syrup and cinnamon on low heat. Cover with a lid, and stir frequently, until the apples are softened (approximately 5 to 10 minutes). Set aside.
- Preheat the oven to 350°F.
- Make a flax egg by combining 1 tbsp ground flax seed with 2 tbsp water, and letting it sit for 5 minutes to form a gel-like substance, (or substitute with 1 egg).
- In a large bowl, mix the dry ingredients.
- In a separate bowl, mix the wet ingredients.
- Line a muffin tin with liners, and pour the batter in ¾ of the way. Top the batter with sticky apple mixture. Bake for 20-25 minutes, and let cool completely.
- Makes 12 muffins.
