    Sticky Cinnamon Apple Muffins


    Ingredients:

    Sticky Apple Ingredients:

    • 2 apples, diced
    • 1 tbsp coconut oil (substitute butter)
    • Splash of maple syrup
    • Pinch of cinnamon
      • 2 apples, diced

    Dry ingredients:

    • 1 cup whole wheat flour (or gluten-free flour)
    • 1/2 cup oat flour
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp cinnamon

     

    Wet Ingredients:

    • 1 egg or a flax egg (1 tbsp ground flax seed + 2 tbsp water)
    • 1 banana mashed
    • 1/2 cup unsweetened apple sauce
    • 1/2 cup coconut sugar
    • 1 cup milk (or milk alternative)
    • 1 tsp vanilla extract

     


    Directions:

    1. Prepare the sticky apple by sauteing 2 diced apples, coconut oil, maple syrup and cinnamon on low heat. Cover with a lid, and stir frequently, until the apples are softened (approximately 5 to 10 minutes). Set aside.
    2. Preheat the oven to 350°F.
    3. Make a flax egg by combining 1 tbsp ground flax seed with 2 tbsp water, and letting it sit for 5 minutes to form a gel-like substance, (or substitute with 1 egg).
    4. In a large bowl, mix the dry ingredients.
    5. In a separate bowl, mix the wet ingredients.
    6. Line a muffin tin with liners, and pour the batter in ¾ of the way. Top the batter with sticky apple mixture. Bake for 20-25 minutes, and let cool completely.
    7. Makes 12 muffins.
