    Chickpea Omelet


    Ingredients:

    • 1/2 cup chickpea flour
    • 2 tbsp nutritional yeast
    • 1/2 tsp tumeric
    • 1/2 tsp salt (and/or black salt for the sulfur smell)
    • 2/3 cup water
    • 1/2 cup thinly sliced vegetables of choice (I recommend moist vegetables such as tomatoes. Dark leafy greens also work great)
    • 2-4 tbsp cashew based vegan cheese
    • 1 tbsp oil


    Directions:

    1. In a bowl, mix the chickpea flour, nutritional yeast, tumeric and salt. Incorporate the water gradually, the vegetables and the vegan cheese.
    2. In a nonstick pan, over medium heat, heat the oil then add you omelet mixture. Let it cook with a lid until the top looks almost dry (approx. 3-5 minutes). Fold the omelet and serve.
