    No Bake Chocolate Protein Bars


    Ingredients:

    • 1 cup Medjool dates, pitted (approximately 8-10 dates)
    • 1 cup Runny Nut/Seed Butter of Choice
    • 3/4 cup Chocolate Covered Quinoa Puffs
    • 1/2 cup Hemp Hearts
    • 1/2 cup Pumpkin Seeds
    • 2 tbsp Chia Seeds
    • 1/2 tsp Vanilla Extract
    • Pinch of Sea Salt
    • Optional toppings - sliced almonds, hemp hearts and quinoa puffs


    Directions:

    1. Soak pitted dates in hot water for 10 min to soften.
    2. Line an 8x8 baking tray with parchment paper.
    3. Place dates and nut/seed butter into a food processor and blend into a thick paste.
    4. Add in hemp hearts, pumpkin seeds and chia seeds and pulse to combine.
    5. Add in quinoa puffs and pulse a few more times.
    6. Press mixture into baking tray and flatten with a spatula (may need to wet the spatula to prevent it sticking to the dough)
    7. Freeze for 6 hours to solidify. Remove, slice into 8 bars and enjoy!
    8. Store leftovers in the fridge or freezer.
