    Dairy Free Superfood Pesto


    Ingredients:

    • 6 cups Chickpea Pasta
    • 1 cup Cherry Tomatoes
    • 2 cups fresh basil
    • 1 cup Baby Spinach
    • 1/2 cup Hemp Hearts
    • 1/2 cup Nutritional Yeast (can sub in Parmesan cheese if not dairy free)
    • 2 Garlic cloves
    • 1 tsp Sea Salt
    • Juice from 1/2 a Lemon
    • 1/3 cup Olive Oil


    Directions:

    1. Cook pasta according to preference.
    2. While the pasta is cooking add basil, spinach, hemp hearts, nutritional yeast, garlic, sea salt and lemon into a food processor and blend until finely chopped.
    3. Slowly drizzle in the olive oil and blend until well combined and creamy.
    4. Slice the tomatoes in half and put them into the serving bowl.
    5. Drain the pasta then toss in the bowl with the tomatoes and pesto.
    6. Top with a sprinkle of hemp hearts and enjoy!
