    Coconut Caramel Apple Pops


    Ingredients:

    • 1 Cup Coconut Sugar
    • 1 Can Condensed Coconut Milk
    • 1 Can Coconut Milk
    • 1 tsp Sea Salt
    • 1 Cup Unsulphured Unsweetened Coconut Shreds
    • 4-5 Apples (or more, depending how many you want to make)
    • 1 Pack of Candy Eyeballs
    • 1 Pack of Bamboo Sticks


    Directions:

    1. Whisk coconut sugar, coconut milk, condensed coconut milk and salt in a sauce pan and bring to a boil on medium/high heat.
    2. Lower the heat and let it simmer for 30 minutes, stirring occasionally. It will start to reduce and thicken.
    3. Remove from heat and let cool slightly. Transfer to a container and let thicken in the fridge for 1-2 hours.
    4. In the meantime, slice your apples about ½" thick and pat dry. Put in the bamboo sticks.
    5. Pour the coconut shreds onto a plate and spread them out.
    6. Once the caramel sauce is thick enough, remove from the fridge and use a spoon or a spatula to "paint" the caramel onto the apple.
    7. Dip the caramel coated apples into the coconut, covering both sides and the edges. Place the eyeballs on.
    8. Enjoy immediately or store in the fridge (the caramel will soften at room temperature). There will be leftovers - enjoy on its own, use as a fruit dip or drizzle over some ice cream!
