    No-Bake Chocolate Coconut Peanut Butter Egg Nests


    Ingredients:

    Prep Time: 10 minutes
    Cook/Bake Time: 15 minutes
    Total Time: 25 minutes
    Yield: 10 nests

    • 1/4 cup (55g) coconut oil
    • 1/2 cup (150g) natural peanut butter
    • 1/3 cup (80ml) maple syrup
    • 2 tbsp (15g) cocoa powder
    • 1 cup (120g) instant oats
    • 1/4 cup (25g) unsweetened shredded coconut
    • 30 pieces (100g) chocolate petite eggs


    Directions:

    1. Melt the oil in a microwave for 30 second intervals until melted. Add the melted oil, peanut butter, maple syrup and cocoa powder to a medium-sized bowl, and blend with a spoon or hand mixer.
    2. Put the oats and coconut shreds in a large bowl, and pour in the chocolate mixture over. Combine well.
    3. Lay out some parchment paper on a large plate or baking tray. Scoop out 10 spoonfuls of the mixture, and form with your finger into round nests.
    4. Add 2-3 chocolate petite eggs into each nest.
    5. Let cool in the fridge (15 minutes) or freezer until hardened. Serve cool or at room temperature. Store in an airtight container in the fridge.
