Savory Pancakes
Ingredients:
- 1/2 cup (65g) Chickpea Flour
- 1/2 cup (75g) Whole-Wheat Flour
- 1/4 cup (20g) Nutritional Yeast
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Curry Powder
- 1 TBSP Baking Powder
- 1 bunch Green Onions, sliced
- 1 Zucchini, grated
- 1/2 cup (70g) Plant-based Milk Alternative
Directions:
- In a bowl mix the dry ingredients.
- Add the grated zucchini and green onions.
- Mix in the milk progressively until you obtain the right consistency. The batter should be smooth, thick, yet still pourable. You might need to add more or less than 1/2 cup depending on how moist your zucchini is.
- Cook in a hot oiled pan for 3 minutes on each side or until golden.
- Serve alone or enjoy with a lemon yogurt dressing!

Total Time: 21 Minutes
Yield: 8-10 Pancakes
