    Vegan Pouding Chômeur


    Ingredients:

    • 1/3 cup (66g) Coconut Oil, melted
    • 1/3 cup (72g) White Fine Sugar
    • 1 tsp Vanilla Extract
    • 1 Flax Egg (1 tbsp ground flax seed + 3 tbsp water)
    • 1/2 cup (130ml) Plant Milk, room temperature
    • 1 1/2 cup (157g) All-Purpose Flour, sifted
    • 1 tsp Baking Powder

     

    Sauce:

    • 1 cup (250ml) Maple Syrup
    • 1 cup (250ml) Plant Milk
    • 2 tbsp Vegan Butter (plus more for greasing the pan)


    Directions:

    1. Preheat the oven to 350°F.
    2. In a bowl, whisk together the coconut oil and the sugar.
    3. Add the vanilla, flax egg and plant milk and whisk together until combined.
    4. Mix together the flour and baking powder and add to the wet ingredients. Set aside.
    5. In a small saucepan add in the maple syrup, plant milk and butter. Heat over medium heat until the butter is melted.
    6. Grease a 9 x 13 baking dish. Pour the mixture and spread evenly into the pan.
    7. Pour the sauce over top.
    8. Bake for 35-40 minutes.
    9. Serve and enjoy!
