    Cranberry White Chocolate Chip Cookies


    Ingredients:

    • 2 3/4 cups (344 g) all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 cup (227 g) unsalted butter, at room temperature
    • 1 cup (200 g) brown sugar, packed
    • 2/3 cup (133 g) white sugar
    • 2 large eggs, at room temperature
    • 1 teaspoon vanilla
    • 1 cup (160 g) dried cranberries
    • 1 1/2 (255 g) cups white chocolate chips


    Directions:

    1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
    2. In a large bowl, mix flour, baking powder, baking soda and salt together. Set aside.
    3. In a large bowl of a stand mixer using the paddle attachment, beat butter and sugars together until light and fluffy. Add eggs, one at a time and continue to beat until creamy and pale in colour. Add vanilla.
    4. Add the flour mixture to your butter mixture in 2 additions.
    5. Now add the cranberries and white chocolate chips, mix until combined.
    6. Using a small cookie scoop, scoop out cookie dough onto your baking sheet. Space each ball approx. 2 inches apart. Add a few extra chocolate chips to the tops of the cookie dough.
    7. Bake in the centre of the oven for approx. 8 minutes. Take the pan out and bang it on the counter a few times to flatten the cookies. Continue to bake for another 2 minutes, just until the edges start to lightly brown. Remove the cookies and bang the baking sheet a few more times. Let the cookies cool on the pan (place the pan on a wire rack). The cookies should be soft and a little gooey in the middle.

     

    NOTES

    • Store cookies in an airtight container or tin for up to 4 days or freeze cookies for up to 2 months.
    • The cookie dough also freezes beautifully. Scoop the dough into balls and place them on a baking sheet. Freeze until solid, then transfer the dough balls to an airtight container or ziplock bag. This way, you can bake fresh cookies anytime. Let the cookie dough come to room temperature before baking.
